From appetisers to desserts, fried, steamed or baked, lovers of this autumn fruit can consume it all winter, each time differently.

HAVE YOU EVER TRIED FRIED PUMPKIN?

Ideal as a finger food appetiser, easy and quick to prepare, the frying and the batter enhance the taste of the pulp, releasing all the sweetness of the pumpkin in the mouth.

In first courses the pumpkin is used in various ways:

  • stuffing for tortelli or stuffed pasta, famous in the Ferrara (cappellacci) and Mantuan version with a pinch of amaretto that enhances the taste of the pumpkin;
  • boiled and blended for delicate velvety soup;
  • cut into cubes or pureed to create sauces to accompany tasty dry pasta.

Pumpkin is also ideal as a side dish, especially in combination with pork: for example cut into cubes and stewed together with sausage or bacon.

Or alternatively, for the non-eat lovers, pumpkin can be cooked together with chickpeas to create an exotic and very spicy dish.

AND DESSERTS?
