The Brix degree

The Brix degree indicates the quantity of sugar contained in fruit and vegetables: the higher the degree, the greater the vitamin content and shelf life. Lorenzini melon is guaranteed with an alcohol content above 14 brix degrees, up to about 20 brix degrees. Remember that the European regulations regarding the marketing of melons admit fruits with a level of ripeness that shows a minimum refractometric index of 8 brix degrees!

Well Brix, the technology that reveals the sugar content of melon

Thanks to the exclusive non-invasive WELL BRIX analyser from Sumitomo Metal Mining in Tokyo, we can detect and process different data and characteristics of each fruit.

Well Brix works with the principle of Infrared Analysis for Transmission (NIT) and analyzes in real-time the values of the sugar content (in Brix degrees), the consistency of the pulp and any internal imperfections.

The analysis is carried out on each fruit and only those that correspond to Lorenzini’s high-quality standards are laser-fired, with their own alphanumeric code of identity. A certainty of traceability, integrity and non-tampering with the product.

The Well Brix analyser is precise (max deviation 0.6 Brix degrees), fast (3 fruits per second) and reliable (analysis in real-time): these characteristics make it the first and only analysis instrument installed in Europe.

The monitoring of the Well-Brix analyser is carried out continuously through laboratory checks and analyses (sample analysis up to 5% of production). Further cross-checks are carried out manually by operators responsible for identifying any external defects (imperfections) of the product.
